The number

Coffee extracts properly between 195°F and 205°F. Below that the acids come out but the sugars and body stay in the grounds: thin, sour coffee no matter how good the beans.

What we measured

  • Moccamaster 200°F, Breville 199°F, OXO 198°F, Bonavita 197°F — all SCA-certified, all in the window.
  • Ninja 192°F, Cuisinart 190°F, Keurig 188°F, Mr. Coffee 185°F — all below it.

The taste panel's blind ranking followed the temperature order almost exactly.

Why cheap machines run cool

A proper heating element that keeps a full flow of water at 200°F costs money. Budget machines use a small element and let the water cool on the way to the basket.

What to do

Spend $160 or more on a certified machine if taste matters. If it does not, buy the Cuisinart or Mr. Coffee and grind fresh — that helps more than any feature.
